I only know today is Tuesday because I looked it up an hour ago. What strange times we are living in. Baking continues to soothe my mind, which my family continues to appreciate.

This week I made Stuffed Croque Monsieur Focaccia with Ricotta and Swiss, Kathleeny Cookies (to take to my sister), Cinnamon Raisin Pecan Sourdough, Strawberry Cornbread Muffins (I used the leftover mini corndog muffin batter and added the strawberries in my fridge that were on their last legs), Brownies (for my niece on her 18th birthday), Mini Corndog Muffins (from a really good gluten free blog), and Multigrain Apple Crisp (for my nephew on his 19th birthday). I also made sandwich bread a couple of times, but never remembered to take a picture.
The focaccia sounds divine!!!

I don’t know how you have time to knit with all the amazing baking you’re doing! It all looks so tasty and now I’m hungry.

Sourdough is shockingly hands off for the most part, which means I can still get knitting done.
