This week I made Mexian Pinto Beans with Queso from the skinnytaste One & Done cookbook. I loved these beans, which is good because it makes a pound of beans and I’m the only one of the house who loves beans.
I’ve been eating the leftovers all week as part of a breakfast burrito bowl. I heat up some beans, top them with scrambled eggs, add a little bit of cheese, hot sauce, jalapenos, and sour cream. It is incredibly filling, I’ve only had lunch once this week – I haven’t been hungry after my huge breakfast.
I will be making the beans again, but probably not until there is someone else who will help me eat them. I love breakfast burrito bowls, but after several days of beans at breakfast I’m ready for a change.
They sound yummy! And what a great way to use them for a tasty breakfast, too!
